Shrimp Kabsa

Ingredients

  • 500 gm. shrimp (peeled, raw, de-shelled & de-veined)
  • 1ยฝ cups basmati rice
  • 2 tbsps. vegetable oil
  • 2 small chili peppers (green & chopped)
  • 2 tsps. ground cardamom
  • 1 large onion (finely chopped)
  • 2 or 20 gm. chicken Stock cubes
  • 2 cups water (hot)
  • 1 cinnamon stick
  • 6 large green bell peppersย 
  • Pinch of ground black pepper
  • 1 tsp. ground cumin
  • Salt (to taste)
  • 1 tbsp. tomato paste
  • 2 medium tomatoes (peeled and chopped)

Directions:

  • Cut open the bell peppers from the top, remove the seeds and membrane inside. Place the peppers in a large oven proof pan and set it aside
  • Take a medium sized pot, pour vegetable oil and sautรฉ onions over medium flame. Cook until translucent. Now add tomato paste and cook for another minute
  • Add water, chicken stock, tomatoes, cumin powder, cinnamon stick, cardamom powder, chili pepper, and shrimp. Cook for about 3-4 minutes with constant stirring until the shrimp turns pink in color
  • Add rice and gently stir. Let it boil and cook with the lid on low flame for about 15 minutes until the rice is cooked with some liquid at the bottom of the pot
  • Divide the rice mixture into equal parts and stuff the bell peppers. Make sure you donโ€™t press them down or overfill because the rice will expand after baking
  • Cover the stuffed bell peppers with aluminum foil. Set the temperature to 175c and bake for about 30 minutes
  • Now, remove the foil and increase the ovenโ€™s temperature to 190c. Bake for another 10 minutes to grill the outside of the bell peppers
  • Serve hot and enjoy!

Christmas Tree Pastry

Ingredients

  • 3 Oz. puff pastry
  • 6 tbsps. Nutella
  • Walnuts (chopped)
  • Edible decorations
  • Egg (for brushing)

Directions

  1. Take the puff pastry and spread Nutella on it.
  2. Sprinkle walnuts and edible decorations.
  3. Now ad another layer of puff pastry.
  4. Cut out a tree shape. Brush egg on top and twist the corners to make it look like a tree.
  5. Add some green edible decorations on too.
  6. Bake for about 40 minutes at 340 degrees.

Ingredients

  • ยพ cup sugar
  • 4 tsps. corn flour
  • 500 ml milk
  • 2 drops vanilla essence
  • 2 tsps. rose water
  • Pistachio (chopped)

Directions

  1. In a small bowl, mix sugar with corn flour. Pour milk and mix to make a pasty mixture. Set aside.
  2. Add milk in a pan and let it boil. Add the mixture in the boiling milk with constant stirring. Keep stirring until the consistency changes. Now add vanilla essence and rsoe water. Cook until the mixture is thick enough.
  3. Decorate with chopped pistachio.

Lemon Cup Cake

Ingredients

  • 3 tbsp. all-purpose flour
  • ยผ tsp. baking powder
  • 3 tbsps. granulated sugar
  • 1 tbsp. icing sugar
  • 1 egg
  • 2 tbsps. vegetable oil
  • 2 tsp. lemon juice
  • 1 tsp. lemon zest

Directions

  1. In a mixing bowl, add all-purpose flour, baking powder, granulated sugar, icing sugar, egg, vegetable oil, lemon juice and lemon zest. Whisk with a fork until the consistency becomes thick and smooth.
  2. Transfer the mixture to a mug. Place it in the microwave for 5 to 6 minutes.
  3. Add rainbow sprinkles on top.
